A few samples of the insider tips you can expect from Beau and Paul:

This one from Beau, on when your fish is cooked just right: If I’m ever in doubt about this, I look in the thickest part of the fish. Unlike beef, you’re not letting out the juices by cutting into it. Personally, I like to take fish off the grill at the medium point, when it’s just done being transparent. Another good test is to take a fork to the top of the thick part and lightly twist. If the fish flakes, it’s done.

And this from Paul, on how to judge wine by the shape of a bottle: If you look at wine bottles themselves, their shapes will sometimes tell you the proper pairing. For example, bottles of Bordeaux have “shoulders,” while more delicate wines that could be sweeter are more sleek in their shape. If you look at various Chardonnays, you’ll notice the bottles don’t have shoulders. The shoulder is a more “masculine,” bolder look – and that’s generally what kind of wine is in those bottles. Sleeker bottles display a more “feminine” look, and the wines associated with them are typically a little more light and delicate.
